In the foothills sky islands of Southeastern Arizona most leaves change in spring instead of fall. Oaks are evergreen not deciduous. The leaves turn yellow because new leaves are replacing the old ones. The emory oak is one of these oaks and it produces the most edible of all the acorns. People from Mexico love this acorn called the bellota.
